Pap business is an upcoming business that is taking another dimension. Come to think of it the whites do almost all the kind of jobs and businesses that we do but their packaging is what distinguishes them.
I am very much happy because the Nigeria of today is working towards achieving that feat. Soonest every job or business we do in our country will be termed dignified.
There is absolutely no business or job that should be called dirty or look down on because the very business we looked down on has actually made the very few who ventured into them rich but people eyes are now opened and are gradually embracing such ventures.
One of the businesses that have been pushed aside is pap business. Although akamu business may not make you a millionaire but it will certainly pave way for you to become a millionaire.
WHAT IS PAP?
Pap is the residue gotten from fermented ground grains such as corn (yellow or white), guinea corn, millet, dawa etc. That is the starchy product gotten from grains that were soaked, grounded and washed.

It can be eaten with pottage beans, akara (bean cake), and moi-moi or maybe I should say with all the legumes family (beans) family.
Pap can be taken alone without combining with anything but you have to add milk, you can allow the milk to flow on top with a sugary substance; sweetener, sugar or honey to make it very tasty.
It can be called pap, ogi or akamu. On this article I will be using these names interchangeably. The most prefered pap is the brown/yellow colours and millet.
MATERIALS/EQUIPMENTS NEEDED ON PAP BUSINESS
Bowls, sieving cloth, bag to use in pressing the water out from the ogi, grinding machine, containers or packaging materials, oven for drying, water, and grains.
HOW TO PROCESS AKAMU
Soak the grains you want to use with water in a bowl or any big container of your interest for two days. On the second day of your soaking pour out the water you used for the soaking. And use another water to rinse or wash them again then take it to the grinders for them to grind them in their big machines.

Note this; you have to soak your grains for more than a day in order to get them fermented enough before grinding. This is because a well-fermented grain will grind well and when they are well grounded you will get more ogi out of it. A less fermented or not well-grounded grain will not produce much ogi.
Some people in other to prevent pap from smelling will hurriedly grind the grains but for those who are doing it for commercial purpose this is not ideal.
Lets continue, after grinding the grains pour plenty water into the bowl, make the solution to be very watery then use a scooping bowl and be fetching into a sieve placed in another bowl within few minutes you are done.
This is the fastest method to use, you can keep the shaft gotten from it for other use mostly for livestock feeds.
In another method you can be cutting the grounded grains into the sieve and be using water to wash off the ogi from the shaft gradually until you finish. The con of this process is that it takes time.
After washing allow the solution to settle for few hours or overnight, pour out the water on top, turn the pap inside a cloth bag and press with stones or heavy equipments in order to squeeze out any remaining fluid. Cut the finished ogi to your desired sizes for sale.
HOW TO PRESERVE OGI
If you are unable to sell all or consumed them in a day then you can put them in the refrigerator or melt them again inside water and be changing the water every day in other to maintain the taste or freshness of the pap before you exhaust them.
You will agree with me that akamu changes taste very fast this is due to the number of bacteria acting on them because of its glucose contents.

In other to slow this activity down you should include ginger, garlic, tiger nuts into the pap either before grinding or after processing but has to be in powder form so as to be able to mix with the pap you can even introduce them after drying the pap to powder form.
Change the pap to powder form by drying under the sun or in an oven, allow the water to completely dry. Package it for sale, seal the mouth very well in other not allow air in.
I will strongly advice that you put any of the additives to it so as to preserve the shelf life and the face of the ogi. The few ones that I bought from the market so far appears dark in colour when prepared though it is manageable, I noticed that none of them added spices to it.
The additives will give the akamu another great taste apart from discouraging boring insects from attacking it.
BENEFITS OF PAP
- It is raw and very natural, cannot be compared to custard in terms of nutrition.
- Ogi is good for patients who suffers high blood pressure because of its potassium content.
- It contains fibre which is very good in digestion.
- Pap is good for nursing mothers, babies and the elderly because of its soluble content.
PROFITABILITY IN PAP BUSINESS
I may not be able to ascertain the profits percentage because it varies from person to person and from one location to another. But the facts remains that the profit potentials is high.
Assuming you bought a bag of corn for #13,000 and sell it #50,000. When you minus the amount used in purchasing of the corn and other expenses you should be realising more than 100% on investment. With this I can boldly say the business is profitable.
To make more money from pap business buy the grains in bags directly from the farm or wholesalers.
WHY YOU SHOULD DO PAP BUSINESS
Pap business does not require huge capital; you can start the business with #1,000 but the bigger the amount the bigger the profit
It is not difficult to start; the business can be started anytime of the year because it does not rely on seasons.
The demand for pap is wide as such there is a ready market for it anytime any day. The stress in it can be managed. With little or no experience you can do pap business successfully.
PACKAGING
Very soon in this country foodstuffs that are not well packaged won’t get buyers. People openly accepts packaged foods because they believe that, apart from being authentic it is also hygienically produced.
In other to attract influential or more buyers brand your product, use attractive and appealing packaging materials. Look for a nice and easy to memorize name to label it.
MARKETABILITY
Advertise to your family members, friends, neighbours, colleagues etc. And sell to them. Locate big shops that sell this kind of product and sell at a discount to them example of such places are Shoprite, Park and Save, Grand Square etc. Others are market men and women, provision shops and the likes.
Since the business is new it will take an aggressive and radical marketing before it can unseat custard.
TIPS
Some people in the business folded up because of their mode of processing. To take precaution, dry your pap immediately after grinding and mix all the necessary additives in other to give it a good taste.
Don’t soak your pap for more than 2 days; over night this is ideal in other to keep your pap fresh and free from odour.
Other things you can add to your pap are; groundnut,,turmeric.
HOW TO PREPARE COOKED OGI
Put the quantity you want to use in a plate and dissolve with a little water, pour boiling water into the dissolve ogi observe it when it is done you will notice.
Note, do not pour the boiled water directly from the fire into it if not the akamu will have seeds in it, allow the water to cold for like 30 seconds before you pour. Also stir the dissolve ogi immediately as you are pouring the water but you have to stop after a while so the pap can cook well.

2. Can I grind the garlic and ginger together with the corn.?
3. And can these garlic and ginger serve as preservatives?
No @Gueen, it won’t cook it but dry. Yes you can grind the garlic and ginger with the corn, they serve as preservative as well
How long will it still like be if I add ginger because not everyone like garlic
Garlic adds flavour and slow down the activities of bacteria, it does not completely preserve the ogi. You can produce it without adding garlic. Just do the type your customers like.
Can I add coconut and tiger nut to the PaP when grinding
Yes @Chibum but if you have tiger nut powder or coconut you can add them after processing the pap
How long can it take oven to dry the akamu. Packaging wet akamu for sale, storing them in a freezer. Is it a bad idea?
@Rosemary it is not bad to store in refrigerator but dont leave it too long. Drying will be achieved in relation to the intensity of light or power you expose the akamu to. So I cant determine the time
